In Their Words: “’Steak Night at Prairie Rose’ is a nod to my very first gig. When I was 14, my dad booked all my shows. I played every Wednesday night at a bar in Decker Prairie, Texas, called the Prairie Rose. Wednesday was always ‘steak night,’ and there was always a game on while I played. I told my wife that story a while back, and she said it would make a great song title. My wife is always right. Everything in this song is true, other than the very end.
